Pork Lettuce Wraps with Peanut Sauce
Jicama-Avocado SaladIngredients
- 2 Tbsp olive oil
- 1½ lb ground pork (or use ground turkey)
- ½ tsp salt
- ½ tsp pepper
- ½ cup all-natural creamy peanut butter
- 2 Tbsp low-sodium soy sauce
- 2 cloves garlic, minced
- 1 Tbsp grated ginger
- 2 tsp chili garlic sauce
- 1 head green leaf lettuce, leaves separated
- ⅓ cup chopped fresh cilantro (or use flat-leaf parsley)
- 1 lime, cut into wedges
Instructions
- Heat oil in a large skillet over medium-high heat; add pork, salt, and pepper.
- Cook 8 minutes or until pork is crumbly and no longer pink; keep warm.
- Whisk together peanut butter, soy sauce, garlic, ginger, and chili garlic sauce.
- Divide pork evenly among lettuce leaves; drizzle with peanut sauce. Sprinkle with cilantro; serve with lime wedges.

- 3 Tbsp olive oil

- 1 small jicama, peeled and cut into thin strips
Side Dish Instructions
- Whisk together lime rind, lime juice, honey, oil, cilantro, salt, and pepper in a serving bowl. Add avocados and jicama; toss.
