Pork Lettuce Wraps with Peanut Sauce

Ingredients

  • 2 Tbsp olive oil
  • 1½ lb ground pork (or use ground turkey)
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup all-natural creamy peanut butter
  • 2 Tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 Tbsp grated ginger
  • 2 tsp chili garlic sauce
  • 1 head green leaf lettuce, leaves separated
  • ⅓ cup chopped fresh cilantro (or use flat-leaf parsley)
  • 1 lime, cut into wedges

Instructions

  1. Heat oil in a large skillet over medium-high heat; add pork, salt, and pepper.
  2. Cook 8 minutes or until pork is crumbly and no longer pink; keep warm.
  3. Whisk together peanut butter, soy sauce, garlic, ginger, and chili garlic sauce.
  4. Divide pork evenly among lettuce leaves; drizzle with peanut sauce. Sprinkle with cilantro; serve with lime wedges.

  • 2 Tbsp lime juice
  • 1 Tbsp honey
  • 3 Tbsp olive oil
  • 3 Tbsp chopped fresh cilantro (or use flat-leaf parsley)
  • ½ tsp salt
  • ½ tsp pepper
  • 2 avocados, thinly sliced
  • 1 small jicama, peeled and cut into thin strips

Side Dish Instructions

  1. Whisk together lime rind, lime juice, honey, oil, cilantro, salt, and pepper in a serving bowl. Add avocados and jicama; toss.
