Pork Chops with Pineapple-Cucumber Salsa

Ingredients

  • 6 bone-in pork chops
  • 1 tsp salt
  • ½ tsp freshly ground pepper
  • 2 cups chopped pineapple
  • 1 small cucumber, finely chopped
  • 1 jalapeño pepper, minced
  • ¼ cup finely chopped red onion
  • 1 Tbsp lime juice
  • 1 Tbsp olive oil

Instructions

  1. Preheat grill to medium-high heat. Sprinkle pork chops with ¾ tsp salt and the pepper.
  2. Grill 4 to 5 minutes per side or until done.
  3. Meanwhile, combine pineapple, cucumber, jalapeño, onion, lime juice, oil, and ¼ tsp salt. Serve salsa over pork chops.

  • 1 cup long-grain brown rice
  • 3 Tbsp chopped fresh cilantro
  • 1 tsp lime zest
  • ½ tsp salt
  • ½ tsp freshly ground pepper

Side Dish Instructions

  1. Cook rice according to package directions; stir in cilantro, lime zest, salt, and pepper.
  2. Serve rice with pork chops.
