Pork Chops with Pineapple-Cucumber Salsa
Cilantro-Lime Brown Rice
Ingredients
- 6 bone-in pork chops
- 1 tsp salt
- ½ tsp freshly ground pepper
- 2 cups chopped pineapple
- 1 small cucumber, finely chopped
- 1 jalapeño pepper, minced
- ¼ cup finely chopped red onion
- 1 Tbsp lime juice
- 1 Tbsp olive oil
Instructions
- Preheat grill to medium-high heat. Sprinkle pork chops with ¾ tsp salt and the pepper.
- Grill 4 to 5 minutes per side or until done.
- Meanwhile, combine pineapple, cucumber, jalapeño, onion, lime juice, oil, and ¼ tsp salt. Serve salsa over pork chops.

- 1 cup long-grain brown rice
- 3 Tbsp chopped fresh cilantro
- 1 tsp lime zest
- ½ tsp salt
- ½ tsp freshly ground pepper
Side Dish Instructions
- Cook rice according to package directions; stir in cilantro, lime zest, salt, and pepper.
- Serve rice with pork chops.
