Poached Eggs in Spicy Tomato Sauce (Shakshuka)
Herbed Mozzarella Cheese Toasts
Ingredients
- 1 (12-oz) pkg sliced bell pepper and onion medley
- 2 tsp smoked paprika
- 2 tsp ground cumin
- ½ tsp cayenne pepper
- 2 Tbsp olive oil
- 1 (24-oz) jar roasted garlic pasta sauce (such as Rao's)
- 1 cup water
- 2 pints multicolored grape tomatoes
- ½ tsp salt
- 6 large eggs
Instructions
- Sauté vegetables, paprika, cumin, and cayenne pepper in hot oil in a large nonstick skillet over medium heat 6 minutes or until tender.
- Stir in pasta sauce, water, tomatoes, and salt. Bring to a simmer; cook 5 minutes. Make 6 indentations in tomato mixture using a spoon.
- Crack eggs into indentations. Cover and cook 8 to 10 minutes or until eggs are cooked to desired doneness.
Side Dish Ingredients
- 6 (1½-oz) slices artisan multigrain bread
- 2 Tbsp olive oil
- 6 (1-oz) slices fresh mozzarella cheese
- ¼ tsp Za'atar seasoning
Side Dish Instructions
- Preheat oven to 450°F. Bake bread on a baking sheet 3 minutes per side or until golden.
- Brush tops of bread with oil; top with cheese, and sprinkle with Za'atar. Bake 2 to 3 minutes or until cheese is melted.
