Pineapple-Glazed Salmon

Ingredients

  • 2 (6-oz) salmon fillets (or other firm fish)
  • ¼ tsp kosher salt
  • 2 Tbsp pineapple preserves
  • 2 tsp fresh lemon juice
  • 1½ tsp olive oil
  • ⅛ tsp cayenne pepper
  • ½ tsp soy sauce
  • 1 clove garlic, minced
  • 1 green onion, chopped

Instructions

  1. Preheat broiler. Place fish on a foil-lined baking sheet; sprinkle with salt.
  2. Process preserves, lemon juice, oil, pepper, soy sauce, and garlic in a food processor until smooth. Brush over fish.
  3. Broil 8 minutes or to desired doneness. Sprinkle with green onion.

  • ½ cup plain couscous
  • 1 cup low-sodium chicken broth
  • 1 Tbsp extra virgin olive oil
  • 3 Tbsp sliced almonds, toasted
  • 1 tsp fresh lemon juice
  • 1 green onion, sliced
  • 1 Tbsp chopped fresh parsley

Side Dish Instructions

  1. Cook couscous according to package directions, using broth instead of water. Fluff with a fork.
  2. Toss hot cooked couscous with oil; cool to room temperature.
  3. Stir nuts, lemon juice, and green onion into couscous. Season with salt and pepper to taste. Sprinkle with parsley.
