Sheet Pan Salmon and Succotash

Ingredients

  • 2 (4-oz) skinless salmon fillets
  • 1½ Tbsp olive oil, divided
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • ½ lb small okra, halved lengthwise
  • ½ cup corn kernels (1 ear; or use frozen corn)
  • ½ cup frozen lima beans
  • 1½ tsp jarred minced garlic
  • 1 pint multicolored grape tomatoes, halved
  • 2 Tbsp chopped fresh basil

Instructions

  1. Preheat oven to 450°F. Place a large rimmed baking sheet in oven while preheating.
  2. Drizzle salmon with ½ Tbsp oil, and sprinkle with ⅛ tsp each salt and pepper; place in center of preheated baking sheet.
  3. Combine okra, corn, beans, 1 Tbsp oil, garlic, and ⅛ tsp each salt and pepper; spread vegetables around salmon on pan.
  4. Bake 18 to 20 minutes or until fish flakes with a fork and vegetables are browned, adding tomatoes during last 5 minutes of cooking. Remove from oven; sprinkle with basil.
