Sheet Pan Salmon and Succotash

Ingredients
- 2 (4-oz) skinless salmon fillets
- 1½ Tbsp olive oil, divided
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- ½ lb small okra, halved lengthwise
- ½ cup corn kernels (1 ear; or use frozen corn)
- ½ cup frozen lima beans
- 1½ tsp jarred minced garlic
- 1 pint multicolored grape tomatoes, halved
- 2 Tbsp chopped fresh basil
Instructions
- Preheat oven to 450°F. Place a large rimmed baking sheet in oven while preheating.
- Drizzle salmon with ½ Tbsp oil, and sprinkle with ⅛ tsp each salt and pepper; place in center of preheated baking sheet.
- Combine okra, corn, beans, 1 Tbsp oil, garlic, and ⅛ tsp each salt and pepper; spread vegetables around salmon on pan.
- Bake 18 to 20 minutes or until fish flakes with a fork and vegetables are browned, adding tomatoes during last 5 minutes of cooking. Remove from oven; sprinkle with basil.
