Grilled Pork with Peaches and Broccoli Slaw

Ingredients

  • ¾ lb pork tenderloin
  • 2 peaches, pitted and quartered
  • 3 Tbsp olive oil, divided
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1½ Tbsp spicy barbecue sauce (such as Stubb's)
  • 1½ Tbsp apple cider vinegar
  • 1 (12-oz) pkg broccoli slaw
  • 3 Tbsp crumbled feta cheese
  • 1 green onion, chopped

Instructions

  1. Preheat grill to medium-high heat. Rub pork and peaches with 1 Tbsp oil; sprinkle with ⅛ tsp each salt and pepper.
  2. Grill pork, covered with grill lid, 12 minutes, turning once and basting with barbecue sauce. Add peaches to grill, and grill pork and peaches 3 to 5 minutes longer or until a meat thermometer inserted into thickest portion of pork reads 145°F and peaches are tender.
  3. Let pork stand 5 minutes before slicing.
  4. Meanwhile, whisk together 2 Tbsp oil, vinegar, and ⅛ tsp each salt and pepper in a large bowl; add broccoli slaw, and toss.
  5. Divide slaw between 2 plates; top with pork, cheese, and green onion.
