Grilled Pork with Peaches and Broccoli Slaw
Ingredients
- ¾ lb pork tenderloin
- 2 peaches, pitted and quartered
- 3 Tbsp olive oil, divided
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1½ Tbsp spicy barbecue sauce (such as Stubb's)
- 1½ Tbsp apple cider vinegar
- 1 (12-oz) pkg broccoli slaw
- 3 Tbsp crumbled feta cheese
- 1 green onion, chopped
Instructions
- Preheat grill to medium-high heat. Rub pork and peaches with 1 Tbsp oil; sprinkle with ⅛ tsp each salt and pepper.
- Grill pork, covered with grill lid, 12 minutes, turning once and basting with barbecue sauce. Add peaches to grill, and grill pork and peaches 3 to 5 minutes longer or until a meat thermometer inserted into thickest portion of pork reads 145°F and peaches are tender.
- Let pork stand 5 minutes before slicing.
- Meanwhile, whisk together 2 Tbsp oil, vinegar, and ⅛ tsp each salt and pepper in a large bowl; add broccoli slaw, and toss.
- Divide slaw between 2 plates; top with pork, cheese, and green onion.
