Chicken and Refried Black Bean Tostadas
Mango-Lime Slaw
Ingredients
- 1 cup shredded rotisserie chicken
- ½ tsp ground cumin
- ½ tsp chili powder
- 2 tsp fresh lime juice
- 2 (0.63-oz) tostada shells (such as Guerrero)
- ½ cup refried black beans (such as Bush's Best)
- ½ cup shredded Mexican-blend cheese
- 1 radish, sliced
Instructions
- Preheat broiler. Combine chicken, cumin, and chili powder in a microwave-safe bowl. Microwave at HIGH 30 seconds or until thoroughly heated. Toss with lime juice.
- Place tostada shells on a baking sheet. Spread beans on shells; top with chicken and cheese.
- Broil 1 to 2 minutes or until cheese melts and begins to brown. Top with radish.
Side Dish Ingredients
- 1½ cups tricolor coleslaw
- ½ (10-oz) pkg diced mango
- 2 Tbsp chopped fresh cilantro
- ½ tsp grated lime rind
- 1 Tbsp fresh lime juice
- 2 Tbsp extra virgin olive oil
- 1 Tbsp honey
- ⅛ tsp kosher salt
Side Dish Instructions
- Combine slaw, mango, and cilantro in a bowl. Whisk together lime rind, juice, oil, honey, and salt; drizzle over slaw.
