Chicken and Refried Black Bean Tostadas

Ingredients

  • 1 cup shredded rotisserie chicken
  • ½ tsp ground cumin
  • ½ tsp chili powder
  • 2 tsp fresh lime juice
  • 2 (0.63-oz) tostada shells (such as Guerrero)
  • ½ cup refried black beans (such as Bush's Best)
  • ½ cup shredded Mexican-blend cheese
  • 1 radish, sliced

Instructions

  1. Preheat broiler. Combine chicken, cumin, and chili powder in a microwave-safe bowl. Microwave at HIGH 30 seconds or until thoroughly heated. Toss with lime juice.
  2. Place tostada shells on a baking sheet. Spread beans on shells; top with chicken and cheese.
  3. Broil 1 to 2 minutes or until cheese melts and begins to brown. Top with radish.

Side Dish Ingredients

  • 1½ cups tricolor coleslaw
  • ½ (10-oz) pkg diced mango
  • 2 Tbsp chopped fresh cilantro
  • ½ tsp grated lime rind
  • 1 Tbsp fresh lime juice
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp honey
  • ⅛ tsp kosher salt

Side Dish Instructions

  1. Combine slaw, mango, and cilantro in a bowl. Whisk together lime rind, juice, oil, honey, and salt; drizzle over slaw.
