Baked Pasta with Meat Sauce
Corn on the Cob and Southern Green Beans
Ingredients
- 1 lb ground beef
- ½ onion, chopped
- 2 cloves garlic, minced
- 1 (24-oz) jar pasta sauce
- 3 Tbsp chopped fresh parsley
- ½ (16-oz) pkg rigatoni
- ½ (8-oz) block cream cheese, softened
- ⅓ cup sour cream
- 1 (8-oz) block mozzarella cheese, shredded
Instructions
- Preheat oven to 350°F. Cook beef, onion, and garlic in a Dutch oven over medium heat 6 to 8 minutes or until beef is browned and crumbly. Drain and return beef mixture to pan. Stir in pasta sauce and parsley.
- Meanwhile, cook pasta according to package directions.
- Stir together cream cheese and sour cream in a bowl; add hot pasta, and toss.
- Spoon about ½ cup meat mixture into a greased 9-inch baking dish.
- Spread half of pasta over meat mixture; top with half of remaining meat mixture and 1 cup cheese. Top with remaining pasta, meat mixture, and cheese.
- Bake 30 to 35 minutes or until bubbly.
Side Dish Ingredients
- 2 ears corn
- 1 Tbsp butter
- ¾ lb green beans, cut into bite-size pieces
- 3 slices bacon, cooked and crumbled
Side Dish Instructions
- Cook corn in a pot of boiling salted water 10 minutes or until tender; drain. Add butter, and season with salt and pepper to taste.
- Cook beans in a small amount of water in a microwavable bowl 3 to 4 minutes; drain. Add salt and pepper to taste; sprinkle with bacon.
