Baked Pasta with Meat Sauce

Ingredients

  • 1 lb ground beef
  • ½ onion, chopped
  • 2 cloves garlic, minced
  • 1 (24-oz) jar pasta sauce
  • 3 Tbsp chopped fresh parsley
  • ½ (16-oz) pkg rigatoni
  • ½ (8-oz) block cream cheese, softened
  • ⅓ cup sour cream
  • 1 (8-oz) block mozzarella cheese, shredded

Instructions

  1. Preheat oven to 350°F. Cook beef, onion, and garlic in a Dutch oven over medium heat 6 to 8 minutes or until beef is browned and crumbly. Drain and return beef mixture to pan. Stir in pasta sauce and parsley.
  2. Meanwhile, cook pasta according to package directions.
  3. Stir together cream cheese and sour cream in a bowl; add hot pasta, and toss.
  4. Spoon about ½ cup meat mixture into a greased 9-inch baking dish.
  5. Spread half of pasta over meat mixture; top with half of remaining meat mixture and 1 cup cheese. Top with remaining pasta, meat mixture, and cheese.
  6. Bake 30 to 35 minutes or until bubbly.

Side Dish Ingredients

  • 2 ears corn
  • 1 Tbsp butter
  • ¾ lb green beans, cut into bite-size pieces
  • 3 slices bacon, cooked and crumbled

Side Dish Instructions

  1. Cook corn in a pot of boiling salted water 10 minutes or until tender; drain. Add butter, and season with salt and pepper to taste.
  2. Cook beans in a small amount of water in a microwavable bowl 3 to 4 minutes; drain. Add salt and pepper to taste; sprinkle with bacon.
