Almond-Crusted Fish
Sweet and Tangy SlawIngredients
- 6 (6-oz) halibut fillets
- ½ tsp kosher salt
- ½ tsp pepper
- 2 large eggs, lightly beaten
- 1 cup almond meal
- 2 Tbsp olive oil
Instructions
- Preheat oven to 450°F. Sprinkle fish with salt and pepper.
- Place eggs in a shallow dish. Place almond meal in a second dish. Dip fish in egg, and dredge in almond meal. Transfer to a baking sheet brushed with oil.
- Bake 10 minutes or until fish flakes with a fork.
Side Dish Ingredients
- 2 Tbsp raw honey
- 1 Tbsp extra virgin olive oil
- 1 Tbsp apple cider vinegar
- 1 Tbsp Dijon mustard
- ½ tsp dried thyme
- ½ tsp salt
- 1 (16-oz) pkg tricolor coleslaw
- ¼ cup chopped flat-leaf parsley
Side Dish Instructions
- Whisk together honey, oil, vinegar, mustard, thyme, and salt in a large bowl. Add coleslaw and parsley; toss.
