Roast Beef And Caramelized Onion Sandwiches

Ingredients

  • 2 Tbsp butter
  • 1 onion, thinly sliced
  • 2 Tbsp whole-grain mustard
  • 2 Tbsp mayonnaise
  • 1 Tbsp horseradish
  • ½ (16-oz) loaf French bread, halved lengthwise and toasted
  • ½ lb thinly sliced deli roast beef
  • 4 to 6 slices provolone cheese

Instructions

  1. Preheat oven to 400°F.
  2. Melt butter in a skillet over medium heat. Add onion; cook 10 to 12 minutes or until tender. Increase heat to medium-high. Cook, stirring constantly, until onion is caramel colored.
  3. Meanwhile, stir together mustard, mayonnaise, and horseradish. Spread over cut sides of bread.
  4. Layer bottom half of bread with roast beef, onion, and cheese. Place on a baking sheet and bake 5 to 7 minutes or until cheese is melted.
  5. Cover with bread top; slice to serve.

Side Dish Ingredients

  • ½ (32-oz) pkg frozen French fries
  • 2 Tbsp butter, melted
  • 1 tsp dried parsley
  • 1 tsp bottled minced garlic

Side Dish Instructions

  1. Bake fries according to package directions.
  2. Stir together melted butter, parsley, and garlic in a bowl; drizzle over fries, and toss to coat.
