Beefy Tater Tot Casserole
Honey-Glazed Carrots
Ingredients
- 1 (1-lb) pkg ground beef
- ½ cup chopped onion
- 2 cloves garlic, minced
- 2 Tbsp all-purpose flour
- 1 cup chicken broth
- 1 (12-oz) pkg frozen peas
- ½ (32-oz) pkg frozen tater tots
- 1 cup shredded Cheddar cheese
Instructions
- Preheat oven to 425°F.
- Cook beef, onion, and garlic in a large oven-safe skillet over medium heat until beef is browned and crumbly; drain, and return to skillet.
- Add flour; cook, stirring constantly, 2 minutes. Stir in broth and peas; bring to a boil, reduce heat, and simmer until slightly thickened.
- Arrange tater tots in a single layer over beef mixture. Bake 25 to 30 minutes or until tater tots are browned and crisp. Sprinkle with cheese, and bake 2 minutes or until cheese is melted.
Side Dish Ingredients
- 1 (16-oz) pkg baby carrots
- ⅓ cup honey
- 2 Tbsp butter
Side Dish Instructions
- Cook carrots in boiling water to cover 10 minutes until tender; drain.
- Return to pan; add honey and butter. Cook 5 to 6 minutes over medium heat, stirring occasionally, until glaze is syrupy.
