Pineapple-Bacon Pizza
Red Pepper Slaw
Ingredients
- 2 slices center-cut bacon, chopped
- 1 cup thinly sliced onion
- 5 cups baby spinach
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup low-sodium marinara sauce
- 1 (3-oz) 7-inch prebaked thin pizza crust
- 1 cup finely chopped pineapple
- ½ cup shredded part-skim mozzarella cheese
Instructions
- Preheat oven to 425°F. Cook bacon and onion in a large skillet coated with cooking spray 5 minutes or until bacon is crisp and onion is tender.
- Add spinach, salt and pepper; sauté 5 minutes or until spinach is wilted.
- Spread marinara sauce over crust; top with bacon mixture, pineapple and cheese.
- Bake 10 minutes or until cheese is melted and sauce is bubbly.
Side Dish Ingredients
- 2 tsp olive oil
- 1½ tsp fresh lemon juice
- ½ tsp honey
- ⅛ tsp salt
- ⅛ tsp pepper
- 1½ cups angel hair coleslaw mix
- ⅓ cup thinly sliced red bell pepper
- 2 green onions, thinly sliced
Side Dish Instructions
- Combine oil, lemon juice, honey, salt and pepper in a bowl.
- Add coleslaw, bell pepper and green onions; toss.
