Pineapple-Bacon Pizza

Ingredients

  • 2 slices center-cut bacon, chopped
  • 1 cup thinly sliced onion
  • 5 cups baby spinach
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup low-sodium marinara sauce
  • 1 (3-oz) 7-inch prebaked thin pizza crust
  • 1 cup finely chopped pineapple
  • ½ cup shredded part-skim mozzarella cheese

Instructions

  1. Preheat oven to 425°F. Cook bacon and onion in a large skillet coated with cooking spray 5 minutes or until bacon is crisp and onion is tender.
  2. Add spinach, salt and pepper; sauté 5 minutes  or until spinach is wilted.
  3. Spread marinara sauce over crust; top with bacon mixture, pineapple and cheese.
  4. Bake 10 minutes or until cheese is melted and sauce is bubbly.

Side Dish Ingredients

  • 2 tsp olive oil
  • 1½ tsp fresh lemon juice
  • ½ tsp honey
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1½ cups angel hair coleslaw mix
  • ⅓ cup thinly sliced red bell pepper
  • 2 green onions, thinly sliced

Side Dish Instructions

  1. Combine oil, lemon juice, honey, salt and pepper in a bowl.
  2. Add coleslaw, bell pepper and green onions; toss.
