Skillet Jerk Shrimp

Pineapple Rice and Steamed Broccoli

Ingredients

  • 2 lb peeled and deveined large shrimp
  • 2 Tbsp Caribbean Jerk seasoning
  • 4 Tbsp butter

Instructions

  1. Toss shrimp with Jerk seasoning.
  2. Melt butter in a large cast-iron or nonstick skillet over medium-high heat.
  3. Add shrimp, in batches if necessary, and cook 2 to 3 minutes per side or until shrimp are pink and firm.

Side Dish Ingredients

  • 2 (8.5-oz) pouches microwavable jasmine rice
  • 2 green onions, sliced
  • ½ cup finely chopped pineapple
  • 2 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Cook rice according to package directions; transfer to a serving bowl, and stir in green onions and pineapple.
  2. Cook broccoli according to package directions; season to taste.
