Summer Gazpacho
Shrimp, Feta, and Basil RelishIngredients
- ½ seedless cucumber, cut into chunks
- 1 small red bell pepper, cut into chunks
- 1 large heirloom tomato, quartered
- ½ cup coarsely chopped red onion
- 1 clove garlic, minced
- 1⅓ cups tomato juice
- 4 tsp white wine vinegar
- 4 tsp olive oil
Instructions
- Process first 5 ingredients in a food processor or blender until coarsely chopped (do not puree). Pour into a bowl or pitcher. Stir in juice, vinegar, and oil; season with salt and pepper to taste. Divide between 2 bowls.
Side Dish Ingredients
- ½ lb peeled and deveined, large cooked shrimp
- ¼ cup thinly sliced fresh basil
- 1 cup grape tomatoes, halved
- 2 Tbsp crumbled feta cheese
- 2 tsp olive oil
Side Dish Instructions
- Toss together all ingredients in a bowl. Season with salt and pepper to taste.
