Spicy Grilled Flank Steak

Ingredients

  • 1 tsp smoked paprika
  • ¾ tsp salt
  • ½ tsp ground cumin
  • ¼ tsp cayenne pepper
  • ¼ cup avocado oil (or use olive oil)
  • 3 Tbsp jarred minced garlic
  • 2 lb flank steak

Instructions

  1. Preheat grill or grill pan to medium-high heat. Stir together paprika, salt, cumin, cayenne pepper, oil, and garlic. Rub steak with spice mixture.
  2. Grill steak, covered, 4 to 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.

  • 1 (8-oz) pkg diced onions
  • 1 Tbsp jarred minced garlic
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp avocado oil (or use olive oil)
  • 1 (12-oz) pkg riced cauliflower
  • 1 cup organic chicken broth
  • ½ cup sliced green olives
  • 2 Tbsp tomato paste
  • 1 tomato, chopped

Side Dish Instructions

  1. Sauté onion, garlic, salt, and pepper in hot oil in a saucepan over medium-high heat 4 minutes or until onion is tender.
  2. Stir in cauliflower, broth, olives, and tomato paste; cover and cook 15 minutes or until cauliflower is tender. Remove from heat; stir in tomato.
