Grilled Chicken with Nectarine Salsa
Grilled Romaine Hearts
Ingredients
- ¼ cup fresh orange juice, divided
- 1 Tbsp salt-free Southwest seasoning (or use salt-free fajita seasoning)
- 2 lb boneless, skinless chicken breasts
- 1 tsp salt, divided
- 4 nectarines, coarsely chopped (or use peaches)
- 2 Tbsp minced jalapeño pepper
- 2 Tbsp chopped fresh cilantro
- 2 Tbsp extra virgin olive oil
- 2 tsp jarred minced garlic
- ½ tsp pepper
Instructions
- Preheat grill to medium-high heat. Combine 2 Tbsp orange juice and seasoning; brush over chicken, and sprinkle with ½ tsp salt.
- Grill chicken, covered, 5 minutes per side or until done.
- Stir together nectarines, jalapeño, cilantro, oil, 2 Tbsp orange juice, garlic, ½ salt, and pepper. Serve nectarine salsa with chicken.
Side Dish Ingredients
- 3 romaine lettuce hearts, halved lengthwise
- 1 Tbsp jarred minced garlic
- 1 Tbsp avocado oil (or use olive oil)
- 1 Tbsp extra virgin olive oil
- 2 tsp red wine vinegar
- 1 tsp Dijon mustard
- ½ tsp kosher salt
- ½ tsp pepper
Side Dish Instructions
- Preheat grill to medium-high heat. Brush cut sides of romaine with garlic and avocado oil. Grill, covered, 2 minutes per side.
- Whisk together olive oil, vinegar, mustard, salt, and pepper; drizzle over romaine.
