Tater Tot "Nachos"
Strawberry Smoothies
Ingredients
- 1 (32-oz) pkg frozen tater tots
- 1 (15-oz) can vegetarian chili
- 2 cups freshly shredded Cheddar cheese
- 2 avocados, halved, pitted, and chopped
- 2 beefsteak tomatoes, chopped
- 1 (8-oz) container sour cream
- ½ cup sliced green onions
Instructions
- Bake tater tots according to package directions in a single layer on a rimmed baking sheet.
- Meanwhile, cook chili in a small saucepan over medium heat 3 to 5 minutes or until thoroughly heated.
- Divide tater tots evenly among 6 serving plates; top evenly with chili, cheese, avocados, tomatoes, sour cream and green onions.
Side Dish Ingredients
- 1 (16-oz) pkg frozen unsweetened strawberries
- 1 cup plain Greek yogurt
- 1 cup orange juice
- 1 Tbsp honey
Side Dish Instructions
- Process strawberries, yogurt, orange juice and honey in a blender, in batches, until smooth.
