Grilled Steak Tartines with Blue Cheese-Bacon Spread

Ingredients

  • 2 (2-oz) slices multigrain bakery bread
  • ½ red onion, cut into thick rings
  • ½ lb flank steak
  • 1 Tbsp olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 slice center-cut bacon
  • 1½ oz ⅓-less-fat cream cheese, softened (3 Tbsp)
  • 1½ Tbsp crumbled blue cheese
  • ½ cup baby arugula

Instructions

  1. Preheat grill to medium-high heat. Brush bread, onion, and steak with oil. Sprinkle steak and onion with salt and pepper.
  2. Grill steak, covered, 4 minutes. Flip steak; add onion and bread to grill.
  3. Grill steak, bread, and onion, covered, 4 to 5 minutes or until steak reaches desired doneness, onion is tender, and bread is toasted, turning bread and onion after 2 minutes. Let stand 10 minutes.
  4. Meanwhile, microwave bacon on a paper towel-lined plate at HIGH 1 minute or until crisp. Crumble.
  5. Combine cream cheese, blue cheese, and bacon. Thinly slice steak across the grain.
  6. Spread cream cheese mixture over one side of each bread slice; top with steak, onion, and arugula.
