Big Easy Baked Chicken Thighs
Roasted Broccoli with Salami and Almonds
Ingredients
- 2 Tbsp fresh lime juice
- 2 Tbsp Cajun seasoning
- 1 Tbsp dried rosemary
- ¼ tsp salt
- ¼ tsp pepper
- 2 lb bone-in, skin-on chicken thighs, skinned
Instructions
- Combine lime juice, Cajun seasoning, rosemary, salt, and pepper in a large zip-top plastic freezer bag. Add chicken; seal bag, and turn to coat. Chill 30 minutes.
- Preheat oven to 400°F. Remove chicken from marinade; discard marinade. Place on a large rimmed baking sheet lined with foil.
- Bake 35 minutes or until chicken is done.
Side Dish Ingredients
- 1 Tbsp coconut oil, melted (or use avocado oil)
- 1 Tbsp fresh lemon juice
- 2 tsp dried thyme
- ¼ tsp salt
- 2 cloves garlic, minced
- 2 (12-oz) pkg broccoli florets
- ¼ cup sliced raw almonds
- 2 oz nitrite-free salami, chopped
Side Dish Instructions
- Preheat oven to 400°F. Whisk together oil, lemon juice, thyme, salt, and garlic; pour over broccoli, and toss. Spread broccoli in a single layer on a baking sheet.
- Bake 20 minutes. Stir in nuts and salami; bake 5 minutes longer.
