Big Easy Baked Chicken Thighs

Ingredients

  • 2 Tbsp fresh lime juice
  • 2 Tbsp Cajun seasoning
  • 1 Tbsp dried rosemary
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 lb bone-in, skin-on chicken thighs, skinned

Instructions

  1. Combine lime juice, Cajun seasoning, rosemary, salt, and pepper in a large zip-top plastic freezer bag. Add chicken; seal bag, and turn to coat. Chill 30 minutes.
  2. Preheat oven to 400°F. Remove chicken from marinade; discard marinade. Place on a large rimmed baking sheet lined with foil.
  3. Bake 35 minutes or until chicken is done.

Side Dish Ingredients

  • 1 Tbsp coconut oil, melted (or use avocado oil)
  • 1 Tbsp fresh lemon juice
  • 2 tsp dried thyme
  • ¼ tsp salt
  • 2 cloves garlic, minced
  • 2 (12-oz) pkg broccoli florets
  • ¼ cup sliced raw almonds
  • 2 oz nitrite-free salami, chopped

Side Dish Instructions

  1. Preheat oven to 400°F. Whisk together oil, lemon juice, thyme, salt, and garlic; pour over broccoli, and toss. Spread broccoli in a single layer on a baking sheet.
  2. Bake 20 minutes. Stir in nuts and salami; bake 5 minutes longer.
