Cajun Turkey Sausage and Shrimp

Ingredients

  • ½ lemon
  • 2 Tbsp coconut oil
  • ½ (14-oz) pkg nitrite-free turkey smoked sausage links, cut into ½-inch pieces
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • ½ lb unpeeled, large raw shrimp, peeled and deveined
  • 2 tsp Cajun seasoning
  • ½ tsp dried thyme

Instructions

  1. Grate zest from lemon. Squeeze juice into small bowl.
  2. Melt oil in a large skillet over medium heat; add sausage, and cook 5 minutes or until browned.
  3. Add onion and garlic; cook 8 minutes, stirring often. Add shrimp, seasoning, thyme, lemon zest, and lemon juice. Cook 3 to 5 minutes or until shrimp turn pink.

Side Dish Ingredients

  • 1 (12-oz) pkg cauliflower florets
  • 1 Tbsp coconut oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Roma tomato, diced
  • 2 Tbsp organic chicken broth
  • 1 Tbsp almond flour

Side Dish Instructions

  1. Pulse cauliflower in a food processor until grits-like consistency.
  2. Melt oil in a saucepan over medium-high heat; add cauliflower, salt, and pepper, and cook 4 minutes, stirring often. Add tomato, broth, and flour. Cook 12 minutes or until liquid is evaporated, stirring often.
