Sheet Pan Spinach-and-Pine-Nut Pizza

Ingredients

  • 1 (1-lb) ball bakery whole wheat pizza dough
  • ⅓ cup roasted garlic marinara sauce
  • 1 (5-oz) pkg baby spinach
  • ¾ cup very thinly sliced red onion
  • 1 (8-oz) ball fresh mozzarella cheese, torn into small pieces
  • 2 heirloom tomatoes, seeded and thinly sliced
  • ¾ cup shaved Parmesan cheese
  • ⅓ cup pine nuts

Instructions

  1. Preheat oven to 450°F. Let dough stand at room temperature 30 minutes to 1 hour.
  2. Coat a large rimmed baking sheet with cooking spray. Spread dough to cover entire baking sheet (see Note). Top with remaining ingredients in order of ingredient list.
  3. Bake 22 to 25 minutes or until crust is crisp and golden brown.

Side Dish Ingredients

  • 2 Tbsp brown sugar
  • 3 Tbsp fresh orange juice
  • ½ Tbsp honey
  • ⅛ tsp cayenne pepper
  • 3 cups cubed pineapple

Side Dish Instructions

  1. Preheat oven to 450°F. Stir together sugar, orange juice, honey, and pepper in a bowl. Add pineapple; toss. Spread in a single layer on a foil-lined rimmed baking sheet.
  2. Bake 10 minutes or until pineapple begins to caramelize.
