Spicy Pork, Pepper, and Tomato Stir-Fry

Ingredients

  • 1½ lb boneless center-cut pork loin chops, cut into thin strips
  • 2 Tbsp olive oil
  • 1½ cups sliced red onion
  • 3 red bell peppers, cut into thin strips
  • 1 pint grape tomatoes
  • ½ cup plus 1 Tbsp low-sodium teriyaki sauce
  • ¾ tsp ground ginger
  • ¼ tsp crushed red pepper

Instructions

  1. Cook pork, in 2 batches, in 1½ tsp hot oil per batch in a large nonstick skillet over medium-high heat 3 to 5 minutes until browned. Remove from skillet.
  2. Sauté onion and bell peppers in 1 Tbsp hot oil in skillet 3 to 4 minutes or until crisp-tender.
  3. Add tomatoes, teriyaki sauce, ginger, crushed red pepper, and pork. Cook 4 minutes or until tomatoes are tender and pork is done.

Side Dish Ingredients

  • 1 cup instant brown rice
  • 2 Tbsp light butter 
  • 1 tsp grated orange rind

Side Dish Instructions

  1. Prepare rice according to package directions; stir in butter and orange rind.
