Spicy Pork, Pepper, and Tomato Stir-Fry
Orange-Scented Rice
Ingredients
- 1½ lb boneless center-cut pork loin chops, cut into thin strips
- 2 Tbsp olive oil
- 1½ cups sliced red onion
- 3 red bell peppers, cut into thin strips
- 1 pint grape tomatoes
- ½ cup plus 1 Tbsp low-sodium teriyaki sauce
- ¾ tsp ground ginger
- ¼ tsp crushed red pepper
Instructions
- Cook pork, in 2 batches, in 1½ tsp hot oil per batch in a large nonstick skillet over medium-high heat 3 to 5 minutes until browned. Remove from skillet.
- Sauté onion and bell peppers in 1 Tbsp hot oil in skillet 3 to 4 minutes or until crisp-tender.
- Add tomatoes, teriyaki sauce, ginger, crushed red pepper, and pork. Cook 4 minutes or until tomatoes are tender and pork is done.
Side Dish Ingredients
- 1 cup instant brown rice
- 2 Tbsp light butter
- 1 tsp grated orange rind
Side Dish Instructions
- Prepare rice according to package directions; stir in butter and orange rind.
