Honey-Sriracha Grilled Chicken Thighs

Ingredients

  • 6 Tbsp Sriracha sauce
  • 2 Tbsp honey
  • 8 bone-in chicken thighs, skinned
  • 2 Tbsp fresh lime juice
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Whisk together 2 Tbsp of the Sriracha sauce and the honey; set aside. Place chicken in a resealable plastic bag; add remaining Sriracha sauce and lime juice. Seal; turn bag to coat chicken. Let stand 15 minutes.
  2. Preheat charcoal or gas grill to medium heat. Grill chicken on the greased rack of a covered grill directly over heat for 30 to 35 minutes or until done (at least 175°F), turning 3 or 4 times.
  3. Remove chicken to a platter; brush with honey mixture. Cover and let stand 5 minutes. Sprinkle with cilantro and serve with lime wedges.

  • ¾ lb green beans, trimmed
  • 2 large shallots, cut into thin slices
  • 3 cloves garlic, thinly sliced
  • 1 to 2 Tbsp olive oil
  • 1½ tsp finely shredded lime zest
  • ¼ tsp salt
  • Dash ground black pepper

Side Dish Instructions

  1. In a medium skillet cook beans in lightly salted boiling water for 2 to 5 minutes or until barely crisp-tender. Drain; rinse beans with cold water.
  2. In same skillet cook shallots and garlic in oil over medium-high heat 2 to 3 minutes or until softened and beginning to brown, stirring occasionally. Add green beans. Toss for 3 to 4 minutes or until heated through. Remove from heat. Stir in lime zest, salt, and pepper.
