Beef-Chorizo Street Tacos with Radish Salsa
Watermelon Wedges with Cilantro-Lime Drizzle
Ingredients
- 1 lb ground chorizo sausage
- ½ lb lean ground beef
- 1 bunch radishes, diced
- 2 green onions, chopped
- ⅓ cup crème fraîche (or use sour cream)
- 2 Tbsp fresh lime juice
- 1 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
- 12 corn tortillas
Instructions
- Cook chorizo and beef in a large nonstick skillet 6 to 8 minutes or until browned and crumbly.
- Meanwhile, combine radishes, onions, crème fraîche, lime juice, oil, salt, and pepper in a bowl.
- Heat tortillas according to package directions. Serve beef-chorizo mixture and radish salsa in tortillas.

- ¼ cup fresh cilantro leaves
- 1 Tbsp extra virgin olive oil
- 1 Tbsp fresh lime juice
- ½ tsp kosher salt
- ¼ tsp pepper
- 1 (3-lb) watermelon, cut into wedges
Side Dish Instructions
- Process cilantro, oil, lime juice, salt, and pepper in a blender or food processor until smooth. Drizzle over watermelon.
