Cheesy Ham-and-Squash Skillet

Ingredients

  • 1½ cups panko bread crumbs
  • 12 oz deli-sliced low-sodium ham, chopped
  • 1 Tbsp olive oil
  • 6 yellow squash, sliced
  • 1½ cups chopped green bell peppers
  • ½ tsp dried oregano
  • 1½ cups shredded reduced-fat sharp Cheddar cheese 

Instructions

  1. Cook panko in a large nonstick skillet medium-high heat 2 minutes or until golden, stirring constantly. Remove from skillet.
  2. Cook ham in hot oil in skillet 2 minutes until lightly browned. Add squash, bell pepper, and oregano; cook 7 to 8 minutes or until vegetables are tender, stirring often. Remove from heat, sprinkle with cheese and panko.

Side Dish Ingredients

  • 3 (12-oz) sweet potatoes
  • 1 Tbsp honey

Side Dish Instructions

  1. Pierce potatoes several times with fork; wrap individually with damp paper towels.
  2. Microwave at HIGH 12 to 15 minutes or until tender when pierced with a fork. Cut potatoes in half lengthwise; drizzle with honey.
