Cheesy Ham-and-Squash Skillet
Honey-Drizzled Sweet Potatoes
Ingredients
- 1½ cups panko bread crumbs
- 12 oz deli-sliced low-sodium ham, chopped
- 1 Tbsp olive oil
- 6 yellow squash, sliced
- 1½ cups chopped green bell peppers
- ½ tsp dried oregano
- 1½ cups shredded reduced-fat sharp Cheddar cheese
Instructions
- Cook panko in a large nonstick skillet medium-high heat 2 minutes or until golden, stirring constantly. Remove from skillet.
- Cook ham in hot oil in skillet 2 minutes until lightly browned. Add squash, bell pepper, and oregano; cook 7 to 8 minutes or until vegetables are tender, stirring often. Remove from heat, sprinkle with cheese and panko.

- 3 (12-oz) sweet potatoes
- 1 Tbsp honey
Side Dish Instructions
- Pierce potatoes several times with fork; wrap individually with damp paper towels.
- Microwave at HIGH 12 to 15 minutes or until tender when pierced with a fork. Cut potatoes in half lengthwise; drizzle with honey.
