Grilled Steak Tartines with Blue Cheese-Bacon Spread

Ingredients

  • 6 (2-oz) slices multigrain bakery bread
  • 1 large red onion, cut into thick rings
  • 1 lb flank steak
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 2 slices center-cut bacon
  • ½ (8-oz) block ⅓-less-fat cream cheese, softened
  • ¼ cup crumbled blue cheese 
  • 1½ cups baby arugula

Instructions

  1. Preheat grill to medium-high heat. Brush bread, onion, and steak with oil. Sprinkle steak and onion with salt and pepper.
  2. Grill steak, covered, 5 minutes. Turn steak, and add onion and bread to grill. Grill, covered, 4 to 5 minutes or until steak reaches desired doneness, onion is tender, and bread is toasted, turning bread and onion after 2 minutes.
  3. Let steak stand 10 minutes before thinly slicing across the grain.
  4. Microwave bacon on a paper towel-lined plate at HIGH 1½ to 2 minutes or until crisp; crumble.
  5. Combine cream cheese, blue cheese, and bacon. Spread over one side of each bread slice; top with steak, onion, and arugula.

  • 6 heirloom tomatoes, cut into wedges
  • ¼ cup torn fresh basil
  • 1 Tbsp balsamic glaze 
  • 1 Tbsp extra virgin olive oil
  • ¼ tsp kosher salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Combine tomatoes and basil in a bowl; drizzle with balsamic glaze and oil, and sprinkle with salt and pepper.
