Grouper Sandwiches with Cajun Rémoulade
Warm Okra, Corn, and Pepper Salad
Ingredients
- 6 (6-oz) grouper fillets (or other firm, white fish)
- 2 Tbsp olive oil
- ¾ tsp kosher salt
- ½ tsp pepper
- 6 (1.9-oz) whole wheat hamburger buns
- ½ cup garlic mayonnaise
- 1 Tbsp Dijon mustard
- 1 Tbsp fresh lemon juice
- 1 Tbsp capers, minced (see Note)
- ½ tsp paprika
Instructions
- Preheat grill to medium-high heat. Brush fish with oil; sprinkle with salt and pepper.
- Grill fish, covered, 4 minutes per side or until fish flakes with a fork. Grill buns, cut sides down, 1 minute or until well marked.
- Stir together mayonnaise, mustard, lemon juice, capers, and paprika. Spread on cut sides of buns. Serve fish on buns.
Side Dish Ingredients
- 3 ears corn, shucked
- 1 large red bell pepper, halved and seeded
- 1 lb okra
- 2 Tbsp olive oil
- 2 green onions, chopped
- 2 Tbsp red wine vinegar
- ½ tsp kosher salt
- ½ tsp pepper
Side Dish Instructions
- Preheat grill or grill pan to medium-high heat. Toss vegetables with oil. Thread okra onto double skewers (two skewers side by side). Grill vegetables, covered, 5 to 6 minutes or until charred, turning occasionally.
- Cut kernels from cobs into a bowl; discard cobs. Remove okra from skewers. Coarsely chop bell pepper. Add okra, bell pepper, and onions to bowl.
- Drizzle vegetables with vinegar; sprinkle with salt and pepper.
