Pork Tenderloin Lettuce Wraps

Ingredients

  • ¼ cup lime juice
  • 2 Tbsp honey
  • 3 Tbsp rice vinegar
  • 3 Tbsp dark sesame oil
  • 2 tsp Sriracha hot sauce (or other favorite hot sauce)
  • 1 lb pork tenderloin, trimmed and thinly sliced
  • 1 cucumber, peeled and thinly sliced
  • 2 heads Bibb or butter lettuce, leaves separated

Instructions

  1. Whisk together lime juice, honey, vinegar, oil, and Sriracha sauce. Divide into 2 portions. Brush one portion over pork; reserve remaining portion.
  2. Sprinkle pork with salt and pepper. Cook in a large greased nonstick skillet over medium-high heat 3 to 4 minutes or until done.
  3. Divide pork, cucumber, and Carrot Slaw among lettuce leaves. Drizzle with remaining sauce; roll up.

Side Dish Ingredients

  • 6 large carrots, shredded
  • 3 Tbsp olive oil
  • 3 Tbsp rice vinegar
  • 1 tsp honey
  • 2 Tbsp chopped fresh cilantro (or use mint)

Side Dish Instructions

  1. Combine all ingredients in a bowl; chill until ready to serve.
