Quick Bruschetta Chicken
Parmesan Cheese Grits with Spinach
Ingredients
- ¾ lb boneless, skinless chicken breast, halved crosswise
- 1½ Tbsp olive oil, divided
- 1 tomato, chopped
- ¼ cup finely chopped red onion
- 3 Tbsp chopped fresh basil
- 1 Tbsp balsamic vinegar
- ¼ tsp garlic powder
- 2 slices frozen garlic toast
Instructions
- Preheat oven to 350°F.
- Pound chicken in a zip-top plastic bag to ½-inch thickness using the heel of your hand or a meat mallet. .
- Cook chicken in 1 Tbsp hot oil in a oven-safe skillet over medium heat 3 minutes per side.
- Transfer skillet to oven; bake 10 minutes or until chicken is done.
- Meanwhile, stir together ½ Tbsp oil, tomatoes, red onion, basil, vinegar, and garlic powder in a bowl.
- Top chicken with tomato mixture; serve over grits.
- Prepare garlic toast according to package directions. Serve alongside chicken.

- ¼ cup freshly shredded Parmesan cheese
