Parmesan Cheese Grits with Spinach

Ingredients

  • ¾ lb boneless, skinless chicken breast, halved crosswise
  • 1½ Tbsp olive oil, divided
  • 1 tomato, chopped
  • ¼ cup finely chopped red onion
  • 3 Tbsp chopped fresh basil
  • 1 Tbsp balsamic vinegar
  • ¼ tsp garlic powder
  • 2 slices frozen garlic toast

Instructions

  1. Preheat oven to 350°F.
  2. Pound chicken in a zip-top plastic bag to ½-inch thickness using the heel of your hand or a meat mallet. .
  3. Cook chicken in 1 Tbsp hot oil in a oven-safe skillet over medium heat 3 minutes per side.
  4. Transfer skillet to oven; bake 10 minutes or until chicken is done.
  5. Meanwhile, stir together ½ Tbsp oil, tomatoes, red onion, basil, vinegar, and garlic powder in a bowl.
  6. Top chicken with tomato mixture; serve over grits.
  7. Prepare garlic toast according to package directions. Serve alongside chicken.

  • ½ (5-oz) pkg baby spinach
  • ¼ cup freshly shredded Parmesan cheese
