Oven-Fried Buffalo Chicken Tenders

Ingredients

  • ¼ cup buffalo wing sauce
  • 2 Tbsp butter, melted
  • ¼ cup all-purpose flour
  • 1½ cups panko breadcrumbs
  • ¾ lb chicken tenderloins
  • ½ cup Ranch dressing

Instructions

  1. Preheat oven to 425°F.
  2. Stir together wing sauce and melted butter in a bowl.
  3. Place flour in a resealable plastic bag; place panko in a shallow dish.
  4. Season chicken with salt and pepper; add to flour. Seal bag, and shake to coat.
  5. Dip chicken in wing sauce mixture; dredge in panko, pressing gently to adhere. Place on a greased wire rack set over a rimmed baking sheet.
  6. Bake 15 to 20 minutes or until panko is browned and chicken is done.
  7. Serve with dressing.

Side Dish Ingredients

  • 1 (10-oz) pkg angel hair coleslaw
  • 1 Gala apple, chopped
  • ½ cup thinly sliced celery
  • 1½ Tbsp white wine vinegar
  • 1½ Tbsp mayonnaise
  • 1 tsp whole-grain mustard
  • ¼ tsp honey

Side Dish Instructions

  1.  Toss together all ingredients in a bowl; season to taste.
