Creamy Cheddar Grits

Ingredients

  • ¾ lb boneless, skinless chicken breasts, cut into chunks
  • ¼ tsp pepper
  • 1 cup frozen seasoning blend (diced onion, bell peppers, and celery)
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 (14.5-oz) can diced tomatoes with basil, garlic, and oregano 
  • 1 tsp gluten-free Cajun seasoning
  • ½ Tbsp chopped fresh thyme

Instructions

  1. Sprinkle chicken with pepper. Sauté chicken, seasoning blend, and garlic in hot oil in a deep skillet over medium-high heat 6 minutes.
  2. Add tomatoes and Cajun seasoning; simmer 6 to 8 minutes or until chicken is done and sauce is thickened. Sprinkle with thyme.

Side Dish Ingredients

  • ½ cup gluten-free quick-cooking grits
  • ⅓ cup shredded Cheddar cheese
  • ½ Tbsp butter

Side Dish Instructions

  1. Cook grits according to package directions; stir in cheese and butter until blended. Season with salt and pepper to taste.
