Oven-Baked Meatballs in Marinara Sauce

Ingredients

  • 1 (20-oz) pkg lean ground turkey
  • ⅓ cup finely chopped onion
  • ¼ cup chopped fresh basil
  • 1 Tbsp Italian seasoning
  • ⅛ tsp salt
  • ¼ tsp crushed pepper flakes
  • 2 large eggs
  • 1 (24-oz) jar low-sodium marinara sauce

Instructions

  1. Preheat oven to 400°F; line a baking sheet with foil. Place a wire cooling rack over foil.
  2. Stir together all ingredients, except the marinara sauce.
  3. Shape mixture into 1-inch balls; place on wire rack.
  4. Bake 15 to 18 minutes or until no longer pink in center.
  5. Transfer meatballs to a skillet; add marinara sauce, and cook over medium heat 5 minutes or until sauce is thoroughly heated.

Side Dish Ingredients

  • 9 oz whole-grain rotini pasta
  • 2 Tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 (10-oz) pkg baby spinach
  • 3 Tbsp light butter with canola oil
  • ¼ tsp salt

Side Dish Instructions

  1. Cook pasta according to package directions; toss with oil and garlic.
  2. Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  3. Add half of the spinach, butter and salt; cook 2 minutes or just until wilted, tossing constantly; transfer spinach to a serving dish.
  4. Repeat procedure with remaining spinach, butter and salt.
