Sheet Pan Pork Chops with Asparagus and Sweet Potatoes

Ingredients
- 6 Tbsp olive oil, divided
- 3 Tbsp fresh lemon juice
- 4 cloves garlic, minced
- 4 tsp smoked paprika (or use paprika)
- 1 tsp dried thyme
- 6 boneless pork chops
- 1½ lb sweet potatoes, peeled and cut into chunks
- 1 lb asparagus, trimmed
Instructions
- Preheat oven to 475°F. Combine 3 Tbsp oil, lemon juice, garlic, paprika, and thyme.
- Combine pork with oil mixture. Place on a large rimmed baking sheet.
- Combine 3 Tbsp oil, potatoes, and asparagus, and arrange around pork. Lightly season pork and vegetables with salt and pepper.
- Bake 25 minutes or until pork is done and vegetables are roasted, turning pork and stirring vegetables once during baking.
