Bacon-Mushroom Turkey Burgers

Ingredients

  • 2 slices bacon
  • ½ (8-oz) pkg mushrooms, finely chopped
  • ½ onion, chopped
  • ⅓ cup finely chopped apple
  • 1 tsp dried thyme
  • ¼ tsp garlic salt
  • ¼ tsp pepper
  • ¾ lb lean ground turkey
  • 1 large egg, beaten

Instructions

  1. Cook bacon in a large skillet over medium-high heat 5 minutes or until crisp; drain, reserving drippings in skillet. Crumble bacon.
  2. Cook mushrooms, onion, apple, thyme, garlic salt, and pepper in hot drippings 5 minutes or until apple is soft; remove from heat, and cool.
  3. Preheat grill to medium-high heat. Combine turkey, egg, mushroom mixture, and bacon in a bowl; shape into 2 (½-inch thick) patties.
  4. Grill patties, covered with grill lid, 5 to 6 minutes per side or until centers are no longer pink.

Side Dish Ingredients

  • 1 bell pepper, cut into 1-inch pieces (any color)
  • 1 zucchini, cut into 1-inch pieces
  • 1 yellow squash, cut into 1-inch pieces
  • 1½ Tbsp balsamic vinegar
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 1 tsp Italian seasoning

Side Dish Instructions

  1. Preheat grill to medium heat. Thread pepper, zucchini, and yellow squash alternately onto 2 (12-inch) metal skewers.
  2. Whisk together vinegar, garlic, oil, and Italian seasoning; brush half of mixture over kabobs. Sprinkle lightly with salt and pepper.
  3. Grill, covered, 8 minutes or until vegetables are tender, basting with remaining vinegar mixture and turning occasionally.
