Broccoli-Cheddar Frittata
Spring Mix Salad with Berries and Almonds
Ingredients
- ½ bell pepper, chopped (any color)
- 2 cloves garlic, minced
- ½ tsp olive oil
- 1 (12-oz) pkg broccoli florets
- ⅓ cup water
- 6 large eggs
- ¾ cup shredded Cheddar cheese, divided
- 2 Tbsp milk
- 1 Tbsp butter
Instructions
- Preheat oven to 400°F. Sauté bell pepper and garlic in hot oil in a large ovenproof skillet over medium-high heat 3 minutes. Add broccoli and water; cook 5 minutes. Remove from skillet.
- Whisk together eggs, ¼ cup cheese, and milk in a bowl.
- Melt butter in skillet over medium-high heat. Add egg and broccoli mixtures; cook 2 minutes. Sprinkle with ½ cup cheese.
- Transfer skillet to oven, and bake 25 minutes or until browned and set. Let stand 2 minutes.
Side Dish Ingredients
- ¼ cup sliced almonds
- 2 Tbsp olive oil
- 1 Tbsp apple cider vinegar
- 1 tsp honey
- ½ tsp Dijon mustard
- ½ (6-oz) pkg spring mix
- ¾ cup sliced strawberries
- ¼ cup thinly sliced red onion
Side Dish Instructions
- Toast nuts in a dry skillet over medium heat until fragrant.
- Whisk together oil, vinegar, honey, and mustard in a bowl. Add spring mix, strawberries, onion, and nuts; toss. Season with salt and pepper to taste.
