Broccoli-Cheddar Frittata

Ingredients

  • ½ bell pepper, chopped (any color)
  • 2 cloves garlic, minced
  • ½ tsp olive oil
  • 1 (12-oz) pkg broccoli florets
  • ⅓ cup water
  • 6 large eggs
  • ¾ cup shredded Cheddar cheese, divided
  • 2 Tbsp milk
  • 1 Tbsp butter

Instructions

  1. Preheat oven to 400°F. Sauté bell pepper and garlic in hot oil in a large ovenproof skillet over medium-high heat 3 minutes. Add broccoli and water; cook 5 minutes. Remove from skillet.
  2. Whisk together eggs, ¼ cup cheese, and milk in a bowl.
  3. Melt butter in skillet over medium-high heat. Add egg and broccoli mixtures; cook 2 minutes. Sprinkle with ½ cup cheese.
  4. Transfer skillet to oven, and bake 25 minutes or until browned and set. Let stand 2 minutes.

Side Dish Ingredients

  • ¼ cup sliced almonds
  • 2 Tbsp olive oil
  • 1 Tbsp apple cider vinegar
  • 1 tsp honey
  • ½ tsp Dijon mustard
  • ½ (6-oz) pkg spring mix
  • ¾ cup sliced strawberries
  • ¼ cup thinly sliced red onion

Side Dish Instructions

  1. Toast nuts in a dry skillet over medium heat until fragrant.
  2. Whisk together oil, vinegar, honey, and mustard in a bowl. Add spring mix, strawberries, onion, and nuts; toss. Season with salt and pepper to taste.
