Creamy Cajun Shrimp with Pasta

Ingredients

  • 8 oz linguine
  • 2 lb peeled and deveined, large raw shrimp
  • 2 Tbsp olive oil
  • 1 (8-oz) pkg chopped onion, bell pepper, and celery mix
  • ½ cup low-sodium chicken broth
  • 1 (28-oz) can fire-roasted crushed tomatoes
  • ½ cup heavy cream
  • 2 Tbsp salt-free Creole seasoning
  • ¾ tsp salt

Instructions

  1. Cook pasta according to package directions. Meanwhile, cook shrimp in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until shrimp turn pink. Remove from skillet.
  2. Add onion mix to skillet, and cook 3 minutes or until tender. Add broth; cook 2 minutes, scraping skillet to loosen browned bits.
  3. Stir in tomatoes, cream, seasoning, and salt; bring to a boil, reduce heat, and simmer 5 minutes. Stir in shrimp; cook 1 minute. Toss with hot cooked pasta.

  • 2 (12-oz) pkg green beans
  • 1½ Tbsp butter
  • ¼ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Steam beans according to package directions; toss with butter. Sprinkle with salt and pepper.
