Creamy Cajun Shrimp with Pasta
Buttered Green Beans
Ingredients
- 8 oz linguine
- 2 lb peeled and deveined, large raw shrimp
- 2 Tbsp olive oil
- 1 (8-oz) pkg chopped onion, bell pepper, and celery mix
- ½ cup low-sodium chicken broth
- 1 (28-oz) can fire-roasted crushed tomatoes
- ½ cup heavy cream
- 2 Tbsp salt-free Creole seasoning
- ¾ tsp salt
Instructions
- Cook pasta according to package directions. Meanwhile, cook shrimp in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until shrimp turn pink. Remove from skillet.
- Add onion mix to skillet, and cook 3 minutes or until tender. Add broth; cook 2 minutes, scraping skillet to loosen browned bits.
- Stir in tomatoes, cream, seasoning, and salt; bring to a boil, reduce heat, and simmer 5 minutes. Stir in shrimp; cook 1 minute. Toss with hot cooked pasta.

- 1½ Tbsp butter
- ¼ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Steam beans according to package directions; toss with butter. Sprinkle with salt and pepper.
