Italian Beef-and-Sausage Subs

Ingredients

  • 2 (8-oz) pkg sliced baby portobello mushrooms
  • 1 Tbsp olive oil
  • ½ lb ground sirloin
  • ½ (16-oz) pkg lean ground turkey breakfast sausage (such as Jennie-O)
  • 1 (8-oz) pkg diced red onions
  • 1 (24-oz) jar arrabbiata sauce (such as Rao's)
  • 6 (1.75-oz) top-sliced hot dog buns
  • 1 cup shredded part-skim mozzarella cheese

Instructions

  1. Preheat broiler. Cook mushrooms in hot oil in a large nonstick skillet over medium-high 6 to 8 minutes or until browned; remove from skillet.
  2. Add beef, sausage, and onion to skillet; cook 5 to 6 minutes or until browned and crumbly. Stir in mushrooms and sauce; cook 3 minutes or until thoroughly heated.
  3. Place buns on a baking sheet, cut sides up, and spoon mushroom mixture into buns. Sprinkle with cheese.
  4. Broil 2 to 3 minutes or until cheese is melted.

Side Dish Ingredients

  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp white wine vinegar
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 1 (10-oz) pkg arugula
  • 3 navel oranges, peeled and sectioned (about 2 cups)
  • ¼ cup roasted, salted almonds, coarsely chopped

Side Dish Instructions

  1. Whisk together oil, vinegar, salt, and pepper in a bowl. Add arugula, oranges, and nuts; toss.
