Beefy Black Bean Soup
Momma's Cheese Nachos
Ingredients
- 1 lb ground beef
- 3 (15.5-oz) cans black beans, drained and rinsed
- 2 (16-oz) jars salsa
- 1 (32-oz) carton chicken broth
- 1 (8-oz) carton sour cream
- ¼ cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Cook beef in a Dutch oven over medium heat, stirring until browned and crumbly. Drain and return to pan.
- Add beans, salsa, and broth; bring to a boil, reduce heat, and simmer 10 minutes.
- Mash beans with a potato masher to reach desired consistency.
- Top each serving with sour cream and cilantro; garnish with lime wedges.

- 1 (12-oz) pkg nacho cheese-flavored tortilla chips
- 1 (8-oz) pkg shredded Cheddar cheese
- ½ cup sliced pickled jalapeño peppers (optional)
Side Dish Instructions
- Preheat oven to 400°F. Arrange chips on a foil-lined baking sheet; sprinkle with cheese. Bake 6 minutes or until cheese is melted.
- Top with peppers, if desired.
