Beefy Black Bean Soup

Ingredients

  • 1 lb ground beef
  • 3 (15.5-oz) cans black beans, drained and rinsed
  • 2 (16-oz) jars salsa
  • 1 (32-oz) carton chicken broth
  • 1 (8-oz) carton sour cream
  • ¼ cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Cook beef in a Dutch oven over medium heat, stirring until browned and crumbly. Drain and return to pan.
  2. Add beans, salsa, and broth; bring to a boil, reduce heat, and simmer 10 minutes.
  3. Mash beans with a potato masher to reach desired consistency.
  4. Top each serving with sour cream and cilantro; garnish with lime wedges.

  • 1 (12-oz) pkg nacho cheese-flavored tortilla chips
  • 1 (8-oz) pkg shredded Cheddar cheese
  • ½ cup sliced pickled jalapeño peppers (optional)

Side Dish Instructions

  1. Preheat oven to 400°F. Arrange chips on a foil-lined baking sheet; sprinkle with cheese. Bake 6 minutes or until cheese is melted.
  2. Top with peppers, if desired.
