Creole Chicken
Creamy Cheddar Grits
Ingredients
- 2 lb boneless, skinless chicken breasts, cut into chunks
- 1 cup frozen seasoning blend (diced onion, bell peppers, and celery)
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 2 (14.5-oz) cans diced tomatoes with basil, garlic, and oregano
- 2 tsp gluten-free Cajun seasoning
- 1 Tbsp chopped fresh thyme (or use 1 tsp dried thyme)
Instructions
- Sprinkle chicken lightly with salt and pepper. Sauté chicken, seasoning blend, and garlic in hot oil in a large, deep skillet over medium-high heat 6 minutes.
- Add tomatoes and Cajun seasoning; simmer 6 to 8 minutes or until chicken is done and sauce is thickened. Sprinkle with thyme.
Side Dish Ingredients
- 1½ cups gluten-free quick-cooking grits (such as Bob's Red Mill)
- 1 cup shredded Cheddar cheese
- 1½ Tbsp butter
Side Dish Instructions
- Cook grits according to package directions; stir in cheese and butter until blended. Season with salt and pepper to taste.
