Citrus Salmon and Whole-Grain Bowls

Ingredients

  • 1 orange
  • 2 tsp brown sugar
  • 2 tsp chili powder
  • ½ tsp ground cumin
  • ½ tsp kosher salt
  • ¼ tsp pepper
  • 1 (¾-lb) salmon fillet
  • 1 (8.5-oz) pouch microwavable seven whole-grains mix (such as Seeds of Change)
  • 1 (10.6-oz) pkg chopped salad kit with sunflower seeds (such as Dole Sunflower Crunch)
  • 2 tsp extra virgin olive oil

Instructions

  1. Grate ½ tsp zest from orange; squeeze juice to equal 2 Tbsp.
  2. Preheat broiler. Combine sugar, orange zest, chili powder, cumin, salt, and pepper. Place fish on a foil-lined rimmed baking sheet; rub with sugar mixture.
  3. Broil 8 to 10 minutes or until fish flakes with a fork.
  4. Meanwhile, cook grains according to package directions. Whisk together salad dressing from salad kit, orange juice, and oil.
  5. Prepare salad kit according to package directions, using orange juice mixture as dressing. Combine grains and salad.
  6. Divide salad among 3 bowls. Break fish into large pieces; top bowls with fish.
