Barbecue Chicken Pizza
Easy Kale SaladIngredients
- 1 (12-inch) prebaked thin pizza crust (such as Mama Mary's)
- 3 Tbsp spicy barbecue sauce, divided (such as Stubb's)
- ¾ cup shredded rotisserie chicken (without skin)
- ⅓ cup shredded reduced-fat Cheddar cheese
- ⅓ cup corn kernels (about 1 ear)
- 2 Tbsp thinly sliced red onion
- 2 tsp refrigerated yogurt Ranch dressing
- 2 tsp chopped fresh cilantro
Instructions
- Preheat oven to 450°F. Place crust on a baking sheet; spread 2 Tbsp barbecue sauce over crust. Top with chicken, cheese, corn, and onion.
- Bake 20 minutes or until crust is done and cheese is melted.
- Meanwhile, combine dressing and 1 Tbsp barbecue sauce. Drizzle sauce over pizza in a zigzag pattern, and sprinkle with cilantro. Cut into wedges.

- 2 Tbsp extra virgin olive oil
- 1 Tbsp red wine vinegar
- 1 tsp honey
- ¾ tsp Dijon mustard
- ⅛ tsp kosher salt
- ¼ tsp pepper
- 1 (5-oz) pkg baby kale
Side Dish Instructions
- Whisk together oil, vinegar, honey, mustard, salt, and pepper in a bowl. Add kale; toss.
