Chipotle Nacho Taco Salads

Ingredients

  • 1½ lb ground beef
  • 1 cup chopped onion
  • 2 (15.25-oz) cans black beans, rinsed and drained
  • 1 (1.25-oz) pkg taco seasoning mix
  • ⅓ cup water
  • 1 (9.75-oz) pkg nacho cheese flavored tortilla chips
  • 2 (10-oz) pkg chopped romaine lettuce
  • 1 cup shredded Cheddar cheese
  • 3 tomatoes, seeded and chopped
  • 1 (16-oz) bottle chipotle ranch salad dressing

Instructions

  1. Cook beef and onion in a large skillet over medium heat until browned and crumbly; drain and return to skillet.
  2. Add beans, taco seasoning mix, and water; bring to a boil, reduce heat, and simmer 10 minutes.
  3. Arrange chips on 6 plates; top with lettuce, meat mixture, cheese, and tomatoes.
  4. Drizzle salads with desired amount of dressing.
