Sticky Lemonade Chicken

Ingredients

  • 2½ lb deli chicken nuggets
  • 1 cup lemonade 
  • 3 Tbsp soy sauce
  • 2 Tbsp rice vinegar
  • 2 Tbsp sweet red chile sauce
  • 1 Tbsp honey
  • 1 Tbsp cornstarch
  • 1 Tbsp refrigerated minced ginger (from a 4 oz tube)
  • 2 (8.8-oz) pouches microwavable rice
  • 1 Tbsp toasted sesame seeds
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Preheat oven to 425°F'.
  2. Bake chicken 10 to 15 minutes on a rimmed baking sheet until browned and crisp.
  3. Meanwhile, whisk together lemonade, soy sauce, vinegar, chile sauce, honey, and cornstarch in a large skillet. Bring to a boil over medium-high heat; reduce heat, and simmer 2 to 3 minutes or until sauce is thickened.
  4. Stir in ginger and chicken nuggets; toss.
  5. Heat rice according to package directions; divide among 6 bowls and top with chicken mixture. Sprinkle with sesame seeds and cilantro.
