Honey-Lime Salmon

Ingredients

  • 2 lb salmon fillet
  • 4 Tbsp butter, melted
  • 3 Tbsp fresh lime juice
  • 3 Tbsp honey
  • 2 tsp minced garlic
  • 3 Tbsp chopped fresh cilantro

Instructions

  1. Preheat oven to 425°F.
  2. Place salmon on a foil-lined rimmed baking sheet; season with salt and pepper.
  3. Stir together melted butter, lime juice, honey, and garlic; spread over salmon.
  4. Bake 10 to 15 minutes (depending upon thickness of fish) until salmon flakes easily. Sprinkle with cilantro.

  • 2 Tbsp olive oil
  • 2 zucchini, chopped
  • 1 (12-oz) pkg frozen whole kernel corn, thawed
  • 2 (8.8-oz) pouches microwavable jasmine rice

Side Dish Instructions

  1. Heat oil in a large skillet over medium-high heat; add zucchini and corn. Cook, stirring often, 5 to 6 minutes or until zucchini is tender.
  2. Meanwhile, heat rice according to package directions; add to zucchini mixture and season to taste.
