Honey-Lime Salmon
Corn and Zucchini Rice
Ingredients
- 2 lb salmon fillet
- 4 Tbsp butter, melted
- 3 Tbsp fresh lime juice
- 3 Tbsp honey
- 2 tsp minced garlic
- 3 Tbsp chopped fresh cilantro
Instructions
- Preheat oven to 425°F.
- Place salmon on a foil-lined rimmed baking sheet; season with salt and pepper.
- Stir together melted butter, lime juice, honey, and garlic; spread over salmon.
- Bake 10 to 15 minutes (depending upon thickness of fish) until salmon flakes easily. Sprinkle with cilantro.

- 2 Tbsp olive oil
- 2 zucchini, chopped
- 1 (12-oz) pkg frozen whole kernel corn, thawed
- 2 (8.8-oz) pouches microwavable jasmine rice
Side Dish Instructions
- Heat oil in a large skillet over medium-high heat; add zucchini and corn. Cook, stirring often, 5 to 6 minutes or until zucchini is tender.
- Meanwhile, heat rice according to package directions; add to zucchini mixture and season to taste.
