Ingredients

  • ½ lb ground beef
  • 3 radishes, diced
  • 1 small green onion, chopped
  • 2 Tbsp sour cream
  • 2 tsp fresh lime juice
  • 1 tsp olive oil
  • 4 corn tortillas

Instructions

  1. Cook beef in a large nonstick skillet 6 to 8 minutes or until browned and crumbly.
  2. Meanwhile, combine radishes, onion, sour cream, lime juice, and oil in a bowl. Season with salt and pepper to taste.
  3. Heat tortillas according to package directions. Serve beef mixture and radish salsa in tortillas.

  • 2 tsp minced fresh cilantro
  • 1 tsp extra virgin olive oil
  • 1 tsp fresh lime juice
  • 4 watermelon wedges

Side Dish Instructions
