Mediterranean Couscous and Flank Steak
Citrus Sliced Pears
Ingredients
- 1 lemon
- 1 seedless cucumber
- 1½ lb flank steak
- ½ tsp salt, divided
- ¼ tsp pepper
- 1 Tbsp olive oil
- 10 oz whole wheat couscous (about 1¾ cups)
- 1 pint multicolored grape tomatoes, halved
- 2 Tbsp chopped fresh basil
- 1 Tbsp chopped fresh flat-leaf parsley
- ½ cup crumbled feta cheese
Instructions
- Grate rind and squeeze juice from lemon. Quarter cucumber lengthwise, and thinly slice.
- Season steak with ¼ tsp salt and pepper; let stand 5 minutes. Cook in hot oil in a large cast-iron skillet over medium-high heat 6 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
- Meanwhile, cook couscous according to package directions; fluff with a fork, and spoon into a large bowl. Stir in ¼ tsp salt, lemon zest, lemon juice, tomatoes, cucumber, basil, and parsley.
- Serve couscous with steak; sprinkle with cheese.
