Mediterranean Couscous and Flank Steak

Ingredients

  • 1 lemon
  • 1 seedless cucumber
  • 1½ lb flank steak
  • ½ tsp salt, divided
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • 10 oz whole wheat couscous (about 1¾ cups)
  • 1 pint multicolored grape tomatoes, halved
  • 2 Tbsp chopped fresh basil
  • 1 Tbsp chopped fresh flat-leaf parsley
  • ½ cup crumbled feta cheese

Instructions

  1. Grate rind and squeeze juice from lemon. Quarter cucumber lengthwise, and thinly slice.
  2. Season steak with ¼ tsp salt and pepper; let stand 5 minutes. Cook in hot oil in a large cast-iron skillet over medium-high heat 6 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
  3. Meanwhile, cook couscous according to package directions; fluff with a fork, and spoon into a large bowl. Stir in ¼ tsp salt, lemon zest, lemon juice, tomatoes, cucumber, basil, and parsley.
  4. Serve couscous with steak; sprinkle with cheese.
