Chicken Caprese Pasta Salad

Ingredients

  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp fresh lemon juice
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 1 pint grape tomatoes, cut in half
  • 6 oz whole-grain penne pasta
  • ½ (8-oz) block part-skim mozzarella cheese, cut into cubes
  • ¼ cup chopped fresh basil
  • 1 cup chopped rotisserie chicken (without skin)

Instructions

  1. Combine oil, lemon juice, salt, and pepper in a large bowl. Add tomatoes, and toss. Let stand 15 minutes.
  2. Cook pasta according to package directions; rinse with cold water to cool.
  3. Add hot cooked pasta, cheese, basil, and chicken to tomato mixture; toss. Cover and chill until ready to serve.
