Lentil Sloppy Joes

Broccoli, Apple and Red Onion Salad

Ingredients

  • ¾ cup lentils
  • 2 carrots, shredded
  • 2 green bell peppers, chopped
  • 1 cup chopped onion
  • 1 (6-oz) can tomato paste
  • ½ cup vegetable broth
  • 1 tsp apple cider vinegar
  • 1 Tbsp Montreal steak seasoning
  • 1 tsp dry mustard (or use prepared yellow mustard)
  • 6 hamburger buns

Instructions

  1. Place lentils in a Dutch oven; cover with water to 3 inches above lentils. Bring to a boil; reduce heat, and simmer 10 to 15 minutes. Drain.
  2. Cook carrots, bell peppers and onion in a large nonstick skillet over medium heat 6 minutes or until browned. Add lentils, tomato paste, broth, vinegar, steak seasoning and mustard. Cook 5 to 8 minutes or until sauce thickens and lentils are tender.
  3. Spoon lentil mixture onto 6 bottom buns; top with bun tops.

Side Dish Ingredients

  • ½ cup chopped red onion
  • 1 head broccoli, cut into florets
  • 1 large apple, chopped
  • ½ cup mayonnaise
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp sugar

Side Dish Instructions

  1. Combine onion, broccoli, and apple in a salad bowl. Whisk together mayonnaise, vinegar, and sugar; toss with broccoli. Season to taste with salt and pepper.
