Lentil Sloppy Joes
Broccoli, Apple and Red Onion Salad
Ingredients
- ¾ cup lentils
- 2 carrots, shredded
- 2 green bell peppers, chopped
- 1 cup chopped onion
- 1 (6-oz) can tomato paste
- ½ cup vegetable broth
- 1 tsp apple cider vinegar
- 1 Tbsp Montreal steak seasoning
- 1 tsp dry mustard (or use prepared yellow mustard)
- 6 hamburger buns
Instructions
- Place lentils in a Dutch oven; cover with water to 3 inches above lentils. Bring to a boil; reduce heat, and simmer 10 to 15 minutes. Drain.
- Cook carrots, bell peppers and onion in a large nonstick skillet over medium heat 6 minutes or until browned. Add lentils, tomato paste, broth, vinegar, steak seasoning and mustard. Cook 5 to 8 minutes or until sauce thickens and lentils are tender.
- Spoon lentil mixture onto 6 bottom buns; top with bun tops.
Side Dish Ingredients
- ½ cup chopped red onion
- 1 head broccoli, cut into florets
- 1 large apple, chopped
- ½ cup mayonnaise
- 2 Tbsp apple cider vinegar
- 1 Tbsp sugar
Side Dish Instructions
- Combine onion, broccoli, and apple in a salad bowl. Whisk together mayonnaise, vinegar, and sugar; toss with broccoli. Season to taste with salt and pepper.
