Turmeric-and-Honey-Glazed Chicken
Mixed Greens with Strawberries and Goat CheeseIngredients
- ½ lb boneless, skinless chicken thighs, cubed
- ¼ tsp salt
- ¼ tsp pepper
- 2 tsp olive oil
- 2 Tbsp honey
- 1½ Tbsp low-sodium soy sauce
- 2 cloves garlic, minced
- ½ tsp ground turmeric
- ⅓ cup instant rice
Instructions
- Sprinkle chicken with salt and pepper; cook in hot oil in a large nonstick skillet over medium-high heat 6 to 7 minutes or until done, stirring occasionally.
- Stir together honey, soy sauce, garlic, and turmeric; add to skillet, and cook 2 to 3 minutes, stirring until sauce is thickened and bubbly.
- Meanwhile, cook rice according to package directions; serve chicken mixture over rice.
Side Dish Ingredients
- 1 (5-oz) pkg mixed baby greens
- 1 cup sliced strawberries
- ¼ red onion, sliced
- 3 Tbsp refrigerated balsamic vinaigrette
- 3 Tbsp crumbled goat cheese (or use feta)
Side Dish Instructions
- Combine greens, strawberries, and onion in a bowl; add vinaigrette, and toss. Sprinkle with cheese.
