Turmeric-and-Honey-Glazed Chicken

Ingredients

  • ½ lb boneless, skinless chicken thighs, cubed
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 tsp olive oil
  • 2 Tbsp honey
  • 1½ Tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • ½ tsp ground turmeric
  • ⅓ cup instant rice

Instructions

  1. Sprinkle chicken with salt and pepper; cook in hot oil in a large nonstick skillet over medium-high heat 6 to 7 minutes or until done, stirring occasionally.
  2. Stir together honey, soy sauce, garlic, and turmeric; add to skillet, and cook 2 to 3 minutes, stirring until sauce is thickened and bubbly.
  3. Meanwhile, cook rice according to package directions; serve chicken mixture over rice.

Side Dish Ingredients

  • 1 (5-oz) pkg mixed baby greens
  • 1 cup sliced strawberries
  • ¼ red onion, sliced
  • 3 Tbsp refrigerated balsamic vinaigrette
  • 3 Tbsp crumbled goat cheese (or use feta)

Side Dish Instructions

  1. Combine greens, strawberries, and onion in a bowl; add vinaigrette, and toss. Sprinkle with cheese.
